Abstract

The proper implementation of a food safety management system (FSMS) is essential for preventing foodborne illnesses and product recalls. Traceability, as an integral component of an FSMS, therefore needs to be emphasized by food and beverage operators (FBOs). This study aimed to evaluate the knowledge, attitudes, and practices of FBOs regarding food safety assurance and traceability, and to analyze the correlations among demographic characteristics, knowledge, attitudes, practices, and inspection results in six regencies/cities in Central Kalimantan, Indonesia. A cross-sectional field survey was conducted involving 59 respondents. The data were analyzed descriptively and using Spearman’s rank correlation test. The results showed that the FBOs had a moderate level of knowledge (72.2%), while their attitudes and practices were classified as good (92.5% and 88.6%, respectively). FBO type was significantly correlated with knowledge and practices, with moderate correlation coefficients of 0.312 and 0.305, respectively (p<0.05). Education level was significantly correlated with practices (r= 0.359, p<0.05), while training history showed positive correlations with knowledge and practices. Knowledge was significantly correlated with attitudes and practices, while attitudes were also significantly correlated with practices (r= 0.330, 0.375, and 0.328, respectively; p<0.05). Overall, knowledge, attitudes, and practices showed positive correlations with inspection results from the Indonesian Food and Drug Authority in Palangka Raya.
