ANALISIS FISIKO KIMIA KONSENTRAT PROTEIN IKAN NILA (Oreochromis niloticus) YANG DIEKSTRAK MENGGUNAKAN PELARUT ETANOL
Abstract
Nile tilapia have not yet been widely used by the people Sangihe and be the last resort to be consumed. Utilization of meat tilapia as a raw material for protein concentrate felt to be very precisely so as to optimize the potential tilapia in Sangihe. Protein concentrates can be extracted using organic solvents such as ethanol. The purpose of this research is extracted of tilapia fish protein concentrates using a solvent ethanol and analyzes of physical-chemical. The data obtained by discussed a sort of descriptive method. The yield obtained range 16,53 % with content of protein 61,13 %, content of lipid 7,11%, whiteness 74,77%, and odor in 2. The results showed that tilapia Fish Protein Concentrate extracted using ethanol solvent is still classified as FPC type C. However, the amino acid test results showed that tilapia FPC contained 20 types of amino acids with lysine as the most amino acid (55,70 mg/g), while the fatty acid test showed that tilapia FPC contained 27 types of fatty acids with 5 types of omega-3 fatty acids (C18:4 n-3, C18:3 n-3, C20;4 n-3, C20:5 n-3, C22:6 n-3), 7 types of omega-6 fatty acid (C18:2 n-6, C18:2 n-6, C18:3 n-6, C20:2 n-6, C20:3 n-6, C20:4 n-6, C22:5 n-6), and types of omega-9 fatty acid (C18:1 n-9, C18:1 n-9, C20:1 n-9, C22:1 n-9). The highest amount of fatty acids is oleic acid (14,31 mg/g). The results of this study are not optimal, so it needs to be modified of the extraction method to obtain better FPC quality.
