Abstract
The objectives of this study were to extract atung seed with water through boiling process to obtain a natural preservative. Atung seed was extracted in boiling water at different ratio (1:5; 1:7; 1:10) and boiling time (10, 20, 30 minutes). The extracts were analyzed their total phenol and antimicrobiol activity. Result showed that the best extract was obtained from the ratio of 1:5 (atung seed : water) and 10 minutes boiling. The best extract had a total phenol of 88.13 mg/100g and antimicrobiol activity of 9.3 mm.

Abstrak
Tujuan penelitian ini adalah melakukan ekstraksi biji atung dengan cara perebusan untuk mendapatkan bahan pengawet alami.Dalam penelitian inidilakukan ekstraksi biji atung dengan perbandingan atung dan air yang berbeda (1:5, 1:7, 1:10) serta lama waktu perebusan yang berbeda (10, 20 dan 30 menit). Hasil ekstraksi dianalisis total fenol dan aktivitas antimikroba. Perlakuan terbaik terdapat pada ekstrak dengan perbandingan 1:5 (atung dan air) selama 10 menit perebusan. Hal ini diperlihatkan dengan nilai total fenol sebesar 88.13 mg/100 g dan aktivitas antimikroba 9.3 mm.
